Issued from the Treasury Department for the Public Health and Marine-Hospital Service of the United States as Hygienic Laboratory Bulletin No. 41, under the direction of M. J. Rosenau. Dr. Rosenau was quarantine officer at San Francisco for several years and later accompanied the U.S. delegation to the Pan-American congress in Mexico as a sanitary expert. He was the delegate from the U.S. to the thirteenth international congress of medicine at Paris in 1900 in order to revise the nomenclature of the causes of death. This bulletin is a result of extensive scientific research in the field of dairy and its relation to public consumption.
