This Japanese volume concerns a famous traditional cake shop in Tokyo's Fukugawa area called Funabashiya, famous for its cakes and other traditional specialty foods. The work contains  descriptions of the many traditional and specialty foods prepared by the shop, with detailed descriptions of the basic materials needed, how the various ingredients are weighed, prepared, and generally made ready for sale. Includes a two page color print showing labels used when offering goods for sale - with names like Dragon Field, Matsutake, Dawn, and One Thousand Birds. The final page lists other available cookbooks. A scarce and unusual title.
