A stirring defense of cider enjoining the gentleman farmer to cultivate the apple and the pear for British potation. Against the blood of the grape from foreign shores, Worlidge argues that the apple and the pear are better suited to the climatic and agricultural conditions of England as well as to the "humour" of the English. Worlidge surveys the various forms of liquor suited to the countries of the known world, including the "liquor of Mays" made in the Americas. He then focuses on the noble beverages best suited for England, cider and perry. In support of this goal for English cultivation is the Apiarium: Or a Discourse of the Government and Ordering of Bees, With their Nature and Properties...First published in 1676.
